This cheese is another gem from the Auvergne region, around Clermont Ferrand. Pasteurized milk. The Auvergne region is a big cheese producer. Its landscape of middle size, old mountains with an area made of old extinguished volcanoes is the perfect terrain for the Montbéliarde cows.
